Ingredients:
871 g (4) boneless, skinless chicken breast
2 1/2 cups low-sodium chicken broth
14 oz pineapple tidbits
1 1/2 cups white rice
100 g red peppers
100 g green peppers
1/2 cup ketchup
2 tbsp brown sugar
2 tbsp reduced sodium soy sauce
2 tbsp white vinegar
2 cloves garlic
Directions:
1. Cook chicken until no longer pink.
2. Add remaining ingredients, stir well.
3. Bring to a boil. Reduce heat to medium low. Cover and simmer for 25 minutes until rice is tender. Stir occasionally.
