From the Loony Spoons Cookbook. Ingredients:
871 g (4) boneless, skinless chicken breast |
2 1/2 cups low-sodium chicken broth |
14 oz pineapple tidbits |
1 1/2 cups white rice |
100 g red peppers |
100 g green peppers |
1/2 cup ketchup |
2 tbsp brown sugar |
2 tbsp reduced sodium soy sauce |
2 tbsp white vinegar |
2 cloves garlic |
Directions:
1. Cook chicken until no longer pink. 2. Add remaining ingredients, stir well. 3. Bring to a boil. Reduce heat to medium low. Cover and simmer for 25 minutes until rice is tender. Stir occasionally. |
