Worlds's Easiest and Possibly Best Guacamole |

I was fussing with all kinds of fancy guacamole recipes when I learned how to make this recipe for the world's easiest guacamole from my California girlfriend who grew up on the stuff. She saw me dealing with cookbooks and cracked up. Most of the Californian's I met used this recipe-the perfectionists just made their own salsa. Sorry you're on your own for salsa. Ingredients:
2 ripe avocados |
4 tablespoons good quality pre-made salsa |
1/4 teaspoon garlic salt |
Directions:
1. Peel and mash avocados. 2. Stir in salsa. The guacamole should be green with hints of the red from the salsa about a tablespoon per avocado-the salsa shouldn't overpower the guacamole. (In California, fresh homestyle salsa was easy to find-now that we live out of state, I use mild Pace Picante). 3. Add a few shakes of garlic salt (the garlic should be evident without being overpowering-I taste as I go). 4. Mix together and serve. Should be prepared as close to serving as possible. Guacamole will turn brown and separate if made too far ahead of time. 5. COOL TIP: To keep Guacamole fresh and avoid browning, place avocado pit in the bowl until ready to serve! Use as a dip with tortilla chips. Spoon generously on burritos (a great way to use leftover roast beef, pork or chicken). We love it on cheese omelettes as well. My kids pile it on top of quesadillas. I read once that Avocados are the most nutrition dense food on the planet. They are rich in mono-saturated fat (the good kind that breaks down cholesterol) as well as vitamin E-ENJOY! |
