Worlds Best Lunchbox Oatmeal Cookies |

Recipe from Chef Jim Meyers. It was found in the Hearald in 2005. Ingredients:
1/2 c (1 stick) butter, softened |
1/2 c vegetable shortening |
1 1/2 c packed light brown sugar |
2 eggs |
1/2 c buttermilk |
1 3/4 c all-purpose flour |
1 t baking soda |
1/2 t salt |
1 t baking powder |
1 t ground ginger |
1 t freshly ground nutmeg |
1 t ground cinnamon |
1/4 t ground cloves |
1/2 t allspice |
1 1/2 c quick-cooking oatmeal |
1 c raisins or chocolate chips |
1 1/2 c chopped walnuts |
1 t pure vanilla extract |
Directions:
1. Preheat oven to 350 degrees. 2. Using an electric mixer, cream together butter, shortening and sugar in a bowl until fluffy. 3. Add eggs and beat until mixture is light in color. 4. Add buttermilk. 5. Sift together flour, baking soda, salt, baking powder, ginger, nutmeg, cinnamon, cloves, and allspice; stir into creamed mixture. 6. Fold in oatmeal, raisins, walnuts, and vanilla, blending well. 7. Drop by rounded teaspoons onto cookie sheet and bake for 12 to 15 minutes. |
