I found this on-line and it's so good I just HAD to share it! Ingredients:
6 boneless skinless chicken breast halves (about 2 1/4 lbs) |
1 cup ranch dressing |
2 cups breadcrumbs (i used panko) |
6 slices bacon |
Directions:
1. Coat chicken breasts in ranch dressing (even better if you marinate chicken in Ranch dressing in the fridge for a few hours but not necessary). 2. Dip the coated chicken breast into the breadcrumbs and cover completely. 3. Arrange chicken in a glass-baking dish. 4. Top each chicken breast with one slice of uncooked bacon. 5. Bake for 45 minutes. |
