Wood Smoked Salmon & Orzo Salad |

I found this recipe in the chat room. It sounds so nice, I'm posting it here for safe keeping. The recipe calls for for Wood Smoked Salmon with a Peppery Crust, but I would expect any hot smoked salmon would work in it okay. If dill is not available it is okay to leave out. Ingredients:
1 cup orzo pasta, cooked |
1 teaspoon sea salt, flakey |
fresh ground black pepper |
1/2 cup peas, cooked |
1 tablespoon dill, fresh and chopped |
1 lemon, grated zest only |
1/4 cup flat leaf parsley, chopped |
3 tablespoons olive oil, extra virgin |
2 tablespoons lemon juice |
2 cups baby spinach leaves |
200 g salmon, hot smoked and broken into chunks |
Directions:
1. Place orzo in a bowl, add salt and pepper to taste. 2. Fold through the peas, dill, lemon rind and parsley. 3. Drizzle in the olive oil and lemon juice. 4. Gently toss everything together. 5. Add the spinach and salmon and fold through. 6. Serve. |
