Wonderful Slow Cooker Lentils  |

                                                1 3/4 cups lentils, sorted and rinsed  |  
                                                2 large onions, chopped  |  
                                                2 cloves garlic, minced  |  
                                                1 (14 1/2 ounce) can diced tomatoes, with liquid  |  
                                                2 cups chicken broth  |  
                                                2 large carrots, sliced  |  
                                                1/2 cup sliced celery  |  
                                                1 bell pepper, diced  |  
                                                2 tablespoons chopped parsley  |  
                                                1 bay leaf  |  
                                                1/2 teaspoon salt  |  
                                                1/8 teaspoon marjoram  |  
                                                1/8 teaspoon sage  |  
                                                1/8 teaspoon thyme  |  
                                                fresh ground pepper  |  
                                                1/2 lb low-fat cheddar cheese, shredded  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Place all ingredients, except the cheese, in the crockpot, stir. 2. Cook on high setting for 2-1/2 hours, or until the lentils are tender. 3. Stir in the cheese until it is melted and serve.                              |
