A Fabulous Light mustard-creme sauce. Ingredients:

4 (6-oz.) boneless skinless chicken breasts |
1/4 tsp. salt |
1/4 tsp. pepper |
2 tbsp. olive oil |
1/4 cup dry white wine or chicken broth |
1/2 cup half n half cream (try to find the low-fat one). |
2 tbsp. dijon mustard |
1 tsp. chopped dried tarragon |
Directions:
1. Sprinkle chicken breasts with salt and pepper. 2. In a large skillet, heat oil over medium-high heat. 3. Add chicken and saute until cooked through, about 10 - 12 minutes, turning once. 4. Transfer to a plate; cover to keep warm. 5. Pour wine or chicken broth into hot skillet; cook, stirring until reduced by half, about 1 minute. 6. Whisk in the half n half cream, mustard and tarragon. 7. Whisk until thickened. 8. Pour any accumulated chicken juices into sauce. 9. Before serving, drizzle cream sauce over chicken. 10. Wonderful with cooked asparagus and/or rice. |
