3/4c sugar |
3/4c packed brown sugar |
3 eggs |
1/2c canola oil |
1/2c unsweetened apple sauce |
1 tsp vanilla |
11/2c flour |
1/2c whole wheat flour |
2tsp baking powder |
1tsp salt |
1tsp cinnamon |
1/2tsp allspice |
14tsp baking soda |
3c finely shredded carrots |
frosting |
3oz cream cheese,softened |
1tbs fat-free milk |
1tsp vanilla |
21/2c confectioners sugar. |
Directions:
1. In large bowl,beat sugars,eggs,oil applesauce and vanilla till well blended. Combine the flours,baking powder,salt,cinnamon,allspice and baking soda;gradually beat into sugar mixture until blended. Stir in carrots and walnuts. 2. Poue into 13x9' baking pan coated with cooking spray. Bake at 350 for 40-45 mins or till a toothpick inserted near center comes out clean. Cool completely on wire rack. 3. For Frosting:,in a small bowl,beat cream cheese with milk and vanilla till fluffy. Add confectioners sugar and salt;beat till smooth. Spread over top of cake.
