This is my version of Tuscan Bread Salad. With tomatoes, garlic, cucumber and fresh mozzarella and herbs, how could you go wrong? cook time is sitting/refrigeration time Ingredients:
3 tomatoes, diced (i do a larger dice here) |
1/2 cucumbers, seedless, diced with skin on or 1/2 english cucumber |
3 -4 garlic cloves, minced |
1/4 cup fresh basil, chopped |
1/4 cup fresh parsley (good) (optional) |
1/3 cup extra virgin olive oil |
3 tablespoons red wine vinegar |
salt |
pepper |
1/2 cup fresh mozzarella cheese, diced (or more) |
5 cups bread, diced (dense, hearty bread like sourdough) |
Directions:
1. combine tomatoes, cucumber, garlic, and herbs in a large bowl. 2. whisk together oil and vinegar, add salt and pepper to taste. 3. pour the oil/vinegar mixture over the veggies and let them sit at room temperature for about 15 minutes. 4. stir them well and add mozzarella and bread. 5. refrigerate for at least 30 minutes before serving. |
