This recipe is almost too good to be low-fat. My co-workers and friends insist that I make it again and again. Ingredients:
2 1/4 cups flour |
1 2/3 cups sugar |
1 teaspoon salt |
1 1/4 teaspooon baking powder |
1 1/4 teaspoon baking soda |
2/3 cup skim milk (i used fat- free milk) |
2/3 cup plain non-fat yogurt |
1 1/4 teaspoon baking powder |
2/3 cup egg beaters |
1 1/4 cups mashed very ripe bananas |
2/3 cup chopped nuts |
Directions:
1. Heat oven to 350 degrees 2. Spray 2 (7 x 3) loaf pans with non-stick cooking spray. 3. Measure all ingredients into a large mixing bowl and mix on low speed for 1/2 minutes, scraping bowl constantly. 4. Then beat on high for 3 minutes. 5. Pour into the 2 loaf pans. 6. Bake 50 minutes - 1 hour or until toothpick comes out clean. |
