Spicy fresh n delicious! Should make about 2 pies. LOTS of apples coming in to the mountains..Time to use some!! :) It is a lovely recipe ALONE or for pies, cobblers, or tarts Ingredients:

5-1/3 cups thinly sliced apples |
2-3/4 teaspoons lemon juice |
1-1/3 cups white sugar |
1/4 cup and 2 teaspoons cornstarch |
1/2 teaspoon ground cinnamon |
1/4 teaspoon salt |
1/8 teaspoon ground nutmeg |
3 cups water |
Directions:
1. In a large bowl, toss apples with lemon juice and set aside. 2. Pour water into a Dutch oven over medium heat. 3. Combine sugar, cornstarch, cinnamon, salt and nutmeg. 4. Add to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly. 5. Add apples and return to a boil. 6. Reduce heat, cover and simmer until apples are tender, about 6 to 8 minutes. 7. Cool for 30 minutes. 8. Seal and freeze if there is leftovers.. 9. Can be stored for up to 12 months. |
