A recipe that the pork loin can be marinated and cooked the day before then sliced and reheated on the grill at tailgate time or cooked whole on the grill at tailgate. By = Chef Dale Ingredients:
2 (1 lb) pork tenderloin |
marinade |
2 cups orange juice |
1/2 cup soy sauce |
1 1/2 tablespoons chopped garlic |
1/4 cup dijon mustard |
1/3 cup honey |
1/2 teaspoon cayenne |
orange aioli |
1 cup mayonnaise |
1/4 cup orange juice |
2 teaspoons tabasco sauce |
1/2 teaspoon sugar |
1/2 teaspoon prepared horseradish |
3/4 teaspoon minced garlic |
2 tablespoons diced green onions |
8 kaiser rolls |
2 tomatoes, sliced |
3 cups shredded lettuce |
1 vidalia onion, sliced thin |
Directions:
1. 1. In a plastic zip bag, marinate pork loins in marinade at least 8 hours, overnight works best. 2. 2. Remove pork from marinade and grill over medium heat for 20 minutes or until internal temperature reaches 160 degrees. 3. 3. Toast Kaiser rolls on the grill. 4. 4. Slice cooked tenderloins in 1/2 inch slices. 5. 5. Spread Aioli on rolls, layer pork the tomato, lettuce & onion. 6. 6. Sit back, root on The Pack and enjoy ! |
