Ingredients:
1/4 cup(s) chopped fresh cilantro |
1 cup(s) chopped tomato or salsa |
1 teaspoon(s) fajita seasoning |
1 cup(s) grated jalapeno jack cheese |
2 green onions, chopped (optional) |
1/2 pound(s) ground beef |
1 pound(s) potatoes, such as russets (about 2 russets) |
1/2 cup(s) sour cream |
Directions:
1. Wash potatoes and prick each several times with a fork. Microwave 6 to 10 minutes or until done, or bake at 425 degrees for 45 minutes to 1 hour. 2. Meanwhile, cook beef with fajita seasoning in a skillet until well-done. 3. Cut potatoes in half and allow to cool slightly. Turn oven to broiler setting. Scoop out some of the flesh from the center of each potato half, leaving about 1/2 inch of potato flesh next to the skin. Fill each potato half with a quarter of the beef and top with a quarter of the cheese. 4. Place potato halves under the broiler until cheese is melted, 2 to 3 minutes. Remove from oven and top with sour cream. Sprinkle with tomato or salsa, cilantro and green onion. Serve immediately. |
