1 cup onion, chopped |
6 bacon, slices cut into 1/2-inch pieces |
3 lbs beef chunk roast, trimmed cut into 2 1/2-inch in pieces |
8 medium red potatoes, halved |
3 medium carrots, cut into 1-inch pieces |
3 medium onions, halved |
8 ounces fresh mushrooms, halved |
1/2 cup fresh parsley, chopped |
1 cup apple juice |
10 1/2 ounces beef broth |
6 ounces tomato paste |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1/2 teaspoon thyme leaves |
1 teaspoon fresh garlic, minced |
2 bay leaves |
Directions:
1. heat oven to 325*F. 2. in Dutch oven place onions, bacon and roast. cook over med-high heat, stirring occasionally until bacon and roast are browned. 3. stir in vegetables. 4. stir in remaining ingredients, cover, bake for 1 1/2 hours. 5. uncover continue baking, stirring occasionally for 2 to 2 1/2 hours or until roast is fork tender. |
