I found this recipe a long time ago and made it today, so decided to share here. Hope you like it. Ingredients:
1 zucchini, chopped |
3-4 large carrots, chopped |
1 cup brown rice |
1 15 ounce can diced tomatoes |
1/2 small broccoli, chopped |
1/2 cup diced onions |
1 can chicken broth |
1-2 tbsp olive oil |
1 tsp minced garlic |
1-2 tsp oregano |
salt and pepper to taste |
Directions:
1. Saute garlic and onion in oil in saucepan. 2. Add and lightly saute carrots, zucchini, and broccoli. Add broth, rice, and tomatoes and bring to a boil. 3. Simmer 35 minutes or until rice is soft. 4. Add seasoning. |
