Adapted from an advertisement that I found in a magazine . Ingredients:
1/4 fresh pumpkin, peeled, seeds removed, diced |
2 parsnips, peeled, diced |
1 leek, finely sliced |
2 small fennel bulbs, finely diced |
200 g creme fraiche |
1/2 cup milk |
2 eggs, beaten |
salt and pepper |
2/3 cup parmesan cheese, grated |
Directions:
1. Heat oven to 190°C. 2. Lightly grease baking dish. 3. Scatter finely diced vegetable over base of dish. 4. In a bowl whisk milk, eggs and creme fraiche together. 5. Season well, pour mixture over vegetables. 6. Scatter cheese over top. 7. Bake 35 - 45 minutes till vegetables are cooked. |
