IRISH WINTER VEGETABLE CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Holland Estate in Portland, Oregon in 1987. Ingredients:
1 pound potatoes sliced |
2 medium parsnips peeled and sliced |
2 medium leeks (use green and white parts) |
1 cup milk |
1 pound cabbage |
1/2 teaspoon mace |
2 large garlic cloves minced |
1 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
2 tablespoons butter |
1 bunch fresh parsley chopped |
Directions:
1. Cook potatoes and parsnips in water until tender. 2. While these are cooking chop leeks and simmer in milk until soft. 3. Cook cabbage and have warm and well chopped. 4. Drain potatoes then season with mace, garlic, salt and pepper then beat well. 5. Add cooked leeks and milk. 6. Blend in cabbage and butter. 7. Garnish with parsley. |
