Ingredients:
3 cups flour |
4 teaspoons baking powder |
1 teaspoon salt |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
3/4 cup sugar |
2 eggs, beaten |
1 cup milk |
1 cup cooked winter squash |
1/2 cup vegetable oil |
1 cup raisins |
Directions:
1. Sift together flour, baking powder, salt, cinnamon, and nutmeg. 2. Combine eggs, milk, squash, and oil. 3. Add raisins to flour mixture. 4. Add sugar to egg mixture. 5. Combine 2 mixtures and stir until just blended. 6. Fill greased muffin cups 2/3 full. 7. Bake at 400 degrees for 15 to 18 minutes or until golden brown. |
