Winter Squash Apple And Orange Soup

Citrus and squash flavored soup. Smooth and comforting.
Ingredients:
2tsp olive oil
2tsp unsalted butter
2 shallots,chopped
1 butternut squash,peeled,and coarsely chopped
4c chicken broth
salt and pepper to taste
juice of one orange
1tsp finely grated fresh ginger
freshly grated nutmeg
paper-thin apple slices for garnish
Directions:
1. In large pot,heat oil and butter;saute the shallots for about 3 mins.or until translucent. Add the chopped squash and apples,stir 2 to 3 mins. and pour in chicken broth.
2. Bring to a boil;reduce heat to med-low,partially cover,and simmer until apples and squash are tender and falling apart,about 35 to 40 mins.
3. Puree the mixture in blender or food processor,in batches,if necessary,until very smoth. Return to pan and add salt and pepper.
4. Just before serving,warm the soup over low heat,then stir in the orange juice and heat through. Add the ginger and nutmeg,adjusting the flavor to suit you; garnish and serve.
