Winter Spinach Pesto (Vegan) |

I looked up a recipe for winter pesto on recipezaar, but I never follow recipes completely. I just used the idea and this is what I came up with. Ingredients:
2 cups spinach |
1/3-1/2 red bell pepper |
1 tablespoon dried basil (fresh would be better) |
1/2 tablespoon dried parsley (fresh would be better) |
1/4 cup canned chick-peas (more for on top if you want) |
1/4 cup coconut milk |
1/4 cup walnuts |
black pepper |
Directions:
1. Add ingredients into a food processor or blender. 2. Blend until smooth. 3. Put over pasta and top with chickpeas if you want. |
