Warm up with this nice winter vegetable soup. Prep time includes soaking beans for 12 hours. Ingredients:
2 cups dried navy beans |
1 large potato |
4 stalks celery, chopped |
1 onion, chopped |
1 tablespoon soy sauce |
2/3 cracked bulgur wheat or 2/3 barley |
2 tablespoons hickory liquid smoke |
1/8 teaspoon garlic powder |
1 teaspoon onion salt |
1 teaspoon seasoning salt |
3 carrots, diced |
1/4 teaspoon parsley |
Directions:
1. Soak beans overnight. 2. Rinse beans under cold running water. Put in crock pot; add water to cover. Turn pot to high. 3. Chop vegetables while sauteing onion in margarine; add to beans. 4. Add hickory flavoring, seasonings and soy sauce. 5. Cook on high for 3 1/2 to 4 hours, stirring occasionally to prevent sticking. Add bulgar or barley and cook an additonal 2 hours. You may need to add some water. 6. Serve hot with corn bread or biscuits. |
