From the Weight Watchers message boards. Ingredients:
2 tablespoons reduced-calorie margarine |
3 medium onions, diced |
1 lb 90% lean ground beef |
1 garlic clove, minced |
1 teaspoon table salt |
1/2 teaspoon black pepper |
1/2 lb frozen mixed vegetables |
1 cup red wine |
1/2 teaspoon dried basil |
1/4 teaspoon thyme |
3 cups beef broth |
1 (28 ounce) can diced tomatoes |
1 medium potato, peeled and diced |
1 cup diced celery |
1 cup diced carrot |
Directions:
1. In a large soup pot, melt margarine. Saute onion until it is soft and translucent, 3-5 minutes. Add garlic and saute 1 minute until fragrant. Add beef and saute, breaking up chunks with a wooden spoon, until all the pinkness is gone. Add remaining ingredients and simmer, covered, 1 hour. Season with salt and pepper to taste. |
