Another quickie that works in a pinch. Ingredients:
1 (14 1/2 ounce) can diced tomatoes |
3 chipotle chiles in adobo (with 1 t. sauce) |
1/2 cup onion |
1/2 teaspoon dried oregano (mexican if you can find it) |
salt |
Directions:
1. Into a blender it all goes and process/pulse for 1 min-you want a few chunks. 2. Pour into a saucepan and simmer for 15 min to reduce a bit. |
