This salad is so delicious, you almost can't stop eating it! It is also beautiful when served in a clear glass bowl. A great accompaniment to any entree. Beautiful addition to a holiday buffet. I call it Winter Salad because it doesn't require a lot of fresh vegetables, but it can be made anytime of year! Read more !
Ingredients:
salad
1 head romaine lettuce
1/2 c. dried cranberries (craisins)
1 pear, cut up
1 apple, cut up
1 c. slivered almonds
1 c. shredded swiss cheese
poppy seed dressing
1/2 c. sugar
1/3 c. lemon juice
1 tsp. dijon mustard
diced onion, to taste
2/3 c. light olive oil
1 t. poppy seed
Directions:
1. Combine salad ingredients. Combine dressing ingredients and toss with salad just before serving.
2. Note: Olive oil will partially solidify if chilled, so if you make the dressing ahead of time and refridgerate, make sure to take it out a half hour or so before serving.
3. Note: I often use two apples if I can't find a good pear.
