From my 42 year old cookbook written by Diana Liu. Winter melon is found in Asian markets. It is also known as white gourd. Ingredients:
1 lb winter melon (white gourd) |
1/3 cup ham |
1 (14 ounce) can chicken broth |
3 1/2 cups water |
1 inch fresh ginger |
1 green onion |
1 teaspoon sherry wine |
2 teaspoons salt |
2 dried chinese mushrooms, diced (soak mushrooms in boiling water to cover for 20 minutes, squeeze dry and cut off stems) |
Directions:
1. Remove melon skin and seeds, cut into 1 squares. Slice ham into thin slices. Cook broth, 3 1/2 cups water, ginger, green onion, sherry,mushrooms, and melon for 1 hour. Add ham for 10 minutes. Remove onion and ginger before serving. Serve hot. |
