Many years ago a dear co-worker shared this recipe with me. Fairly quick to make with few ingredients.It has been a family favorite and my newly married daughter has requested it for her recipe box, too. It bakes into a really dense and hearty loaf rather than a cake. Depending on the juiciness of the apples, the baking time varies so be sure to test it with a toothpick to see if it is done. Otherwise, it will be a mass of goo in the center of the loaf! Hope you love it as much as we do! Ingredients:
1 egg |
1 cup sugar |
1/2 cup oil |
1 teaspoon baking soda |
1 1/2 cups flour |
1 dash salt |
2 cups peeled chopped apples |
1 cup chopped walnuts |
1 teaspoon vanilla |
Directions:
1. Beat egg and sugar. 2. Add oil, baking soda, flour, and salt. 3. Mix in apples. 4. Batter will be VERY thick.(Apples make own liquid). 5. Add chopped nuts and vanilla. 6. Bake in greased and floured loaf pan at 350°F for approximately 40-45 minutes. |
