Another great recipe from Quick Cooking magazine. This is great on a hot day when you want something cool and refreshing for dessert. Cook time is chill time. Ingredients:
1 (3 ounce) package lemon gelatin |
2 cups boiling water, divided |
2 cups vanilla ice cream |
1 (3 ounce) package orange flavor gelatin |
1 cup cold water |
1 (11 ounce) can mandarin oranges, drained |
Directions:
1. In a bowl, dissolve lemon gelatin in 1 cup boiling water. 2. Whisk in ice cream until blended. 3. Pour into 4-oz. stemmed glasses. 4. Chill for 2 hours or until set. 5. Dissolve orange gelatin in remaining boiling water. 6. Stir in cold water and oranges. Chill for 2 hours or until partially set. 7. Pour over the lemon layer. 8. Chill for 2 hours or until set. 9. Garnish with cool whip and enjoy! |
