Winey Green Beans With Turkey Bacon |

This is an easy, delicious way to prepare green beans. The salty flavor of the bacon works well with the sweetness of the wine. Ingredients:
6 strips turkey bacon |
1 t olive oil |
1 large shallot, chopped |
1 clove garlic, chopped |
1/3 c dry white wine |
1 lb. green beans |
1 t butter |
salt and pepper to taste |
Directions:
1. Blanch green beans in a pot of salted water to desired doneness. 2. Cook bacon in a large skillet until crisp. (Add 1 or 2 t. of olive oil if needed. I usually don't need it.) 3. Set aside bacon, and add olive oil to hot pan on medium. 4. Add shallots and garlic and cook for 3-5 minutes, until softened. 5. Deglaze pan with wine and cook for another 3 minutes or so until just a few tablespoons of wine are left. 6. Add blanched green beans to pan, along with cooked, crumbled bacon, butter, and salt and pepper. Toss together. |
