I love puy lentils, and found this recipe for them on the internet. Ingredients:
3 tablespoons olive oil |
2 shallots, finely sliced |
1 clove garlic, crushed |
1 small carrot, peeled and finely diced |
1 stalk celery, finely diced |
250 g tomatoes, peeled and roughly chopped |
100 ml red wine |
200 g puy lentils |
salt & freshly ground black pepper |
6 tablespoons finely chopped parsley |
Directions:
1. Heat the oil in a medium saucepan over a medium-low heat. 2. Add the shallots, garlic, carrot and celery and sautee gently until extremely soft. 3. Add the chopped tomatoes, and cook briskly until they are reduced to a thick puree. 4. Mix in the red wine and cook down to a puree. 5. Rinse the lentils and add to the puree along with 400ml of water. 6. Bring to the boil before reducing to a simmer. 7. Cook for 20-25 minutes or until the lentils are tender, but still holding their shape. 8. Season to taste with the salt and pepper and stir in the parsley just before serving. 9. These are good with grilled or roast meats. |
