Wine-Marinated Country-Style Ribs |

These are a delicious way to grill ribs. Be very careful while grilling ribs for at least the first 1/2 hour otherwise they will burn from the drippings falling into grill (unless you put a drip pan underneath). These do require a long marinading time. Ingredients:
2 tablespoons oil |
1 teaspoon dried oregano leaves |
2 cloves garlic, minced |
1/2 cup dry red wine |
1 teaspoon sugar |
1/2 teaspoon salt |
1/4 teaspoon pepper |
3 lbs country-style pork ribs, cut into serving pieces (i use the big beef ribs) |
Directions:
1. Heat oil over medium heat. 2. Cook oregano and garlic 30 seconds. 3. Remove from heat and stir in wine, sugar, salt, and pepper. 4. Place ribs in a glass dish. 5. Pour wine mixture over top; turn to coat. 6. Cover and refrigerate at least 4 hours. 7. Turn ribs occasionally to coat with marinade. 8. Prepare grill. 9. May want to place a drip pan underneath. 10. Remove ribs from marinade reserving marinade. 11. Grill ribs on grill over medium heat for approximately 1 hour, turning occasionally and brushing with marinade, until ribs are cooked. 12. Discard remaining marinade. |
