Wine And Cheese Overnight Omelet

Elegant in a pan. This is a recipe I purchased from an estate sale several years ago. I served it when I had finicky and snooty weekend guests a few years back and they loved it and requested it on the second morning of their stay. Read more . Ingredients:
1 loaf day old french or italian bread crumbled
6 tablespoon unsalted butter melted
3/4 pound swiss cheese shredded
1/2 pound pepper jack cheese shredded
9 thin slices salami chopped
16 eggs
3-1/4 cups milk
1/2 cup dry white wine
4 large green onions minced
1 tablespoon whole grain mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground red pepper
1-1/2 cups sour cream
1 cup shredded asiago cheese
Directions:
1. Grease two rectangular baking pans.
2. Spread bread over bottom of baking pans then drizzle with butter.
3. Sprinkle with Swiss cheese, pepper jack cheese and salami.
4. With whisk beat eggs, milk, wine, onion, mustard and peppers together until foamy.
5. Divide egg mixture and pour into baking dishes then cover with foil.
6. Refrigerate overnight then bake covered at 350 for 1 hour .
7. Uncover and spread with sour cream then sprinkle with Asiago cheese.
8. Bake uncovered until crusty and light brown about 10 minutes.
