Ingredients:
10 oz. raw spinach |
1 tbsp minced garlic |
2 tbsp pine nuts |
1/4 cup golden raisins |
1 tbsp extra virgin olive oil |
1/2 tsp salt |
1 tsp pepper |
Directions:
1. Heat oil in a large nonstick skillet over medium-high heat. 2. Add raisins, pine nuts and garlic; cook, stirring, until fragrant, about 30 seconds. 3. Add spinach and cook, stirring, until just wilted, about 2 minutes. 4. Season with salt and pepper. |
