Wilted Spinach, Basil, and Peach Salad |

A very easy summer salad. Kids will love their spinach. Ingredients:
6 -7 cups tightly packed spinach leaves, remove stems and tear larger leaves |
2 cups basil leaves |
1/2 cup best quality olive oil |
3 cloves garlic, finely chopped |
1/2 cup pine nuts |
4 ounces diced prosciutto |
3/4 cup grated parmesan cheese or 3/4 cup romano cheese |
1 very ripe nectarines or 1 peach, thinly sliced |
Directions:
1. Wash and drain well the basil and spinach. 2. In a small skillet, heat garlic and pine nuts in olive oil. 3. When nuts turn golden brown, add prociutto; cook for 2-3 minutes. 4. Pour the mixture over spinach and basil. 5. Add the sliced peach and Parmesan. 6. Fold everything together. 7. Addjust seasoning if needed. |
