Wilted Red Cabbage with Balsamic Vinegar |

This recipe can be prepared in 45 minutes or less. Ingredients:
10 red cabbage leaves |
1 small onion |
2 tablespoons water |
2 1/2 teaspoons balsamic vinegar |
1/2 teaspoon sugar |
2 teaspoons olive oil |
freshly ground black pepper to taste |
Directions:
1. Thinly slice cabbage and onion separately. In a small bowl stir together water, vinegar, and sugar until sugar is dissolved. In a 10- to 12-inch heavy skillet cook onion in oil over moderately low heat, stirring occasionally, until softened. Add cabbage and sauté over moderately high heat, stirring, until crisp-tender, about 5 minutes. Stir in vinegar mixture and pepper until combined well. |
