My Grand-mother which lived along the bayou would make this dish on Sundays Dinner/lunch with fresh leafy lettuce from her garden . She would serve this dish with Fried /Baked Chicken , or Fried/Baked Pork Chops, Roast. Read more .. I just remember how much we all loved it.. Hope you do too! Ingredients:
2 bunches of leafy lettuce |
1 lb bacon |
2 eggs |
8 to 10 stalks of green onions |
pinch or two of salt (this depends if you like salt you can add to your taste) |
1 teaspoon of vingar |
1 tablespoon of cooking oil |
small pot |
one large skillet |
one large glass or metal mixing bowl |
1 small plate |
1 small bowl |
1 med plate |
2 paper towels |
Directions:
1. Wash and Cut up Leafy lettuce into med pieces 2. set aside into your glass or metal bowl 3. In your small pot boil your eggs 4. In your large skillet put your 1 tablespoon of oil / put heat on 5. Cut up your bacon in bite size pieces and fry in large skillet 6. (reason for oil in skillet bacon will fry dry and crunchy) 7. Now.. Eggs are boiled.. peel and slice(not to thin) set aside.. on a small plate. 8. Chop up Green onions place in small bowl set to the side. 9. Now add Green onion into Lettuce bowl 10. Add your vingar , salt and toss 11. Place paper towels on Med. plate 12. Bacon is cooked take it place on paper towels 13. DO NOT THROW AWAY OIL..FROM FRYING BACON YOU NEED IT HOT AND TO 14. Take HOT OIL AND POUR OVER LETTUCE AND TOSS 15. THEN ADD BACON 16. THEN GARNISH WITH SLICES OF EGG 17. SERVE HOT.. 18. Before doing this side dish make sure your main meat dish is done and ready to place onto plates 19. Oh yes... I do use some Slap Yo' Mama some times because I like it... 20.
