WILTED DANDELION GREENS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Anderson Estate in Wylie, Texas in 1991. Ingredients:
2 quarts dandelion greens |
1/4 cup bacon fat |
1/4 cup cider vinegar |
2 teaspoons granulated sugar |
1 teaspoon salt |
2 tablespoons chopped fresh parsley |
Directions:
1. Wash greens thoroughly and cut off any stems. 2. Cut into small pieces with scissors. 3. Heat bacon fat, vinegar, sugar, and salt in a heavy saucepan. 4. Wipe greens dry and add. 5. Cook over moderate heat covered until wilted and tender about 12 minutes. 6. Stir in parsley then serve immediately. |
