Slow cooking a mess of greens is a time honored Southern tradition. Slow cooking not only renders the most tender, flavorful greens, but also produces the much coveted pot likker (The pale green pork flavored broth that the greens are served in). Read more . I have spent a long time perfecting this recipe and it is one of my all-time favorites! Ingredients:
4 pounds collard greens |
1/2 pound thick sliced bacon, diced |
6 tablespoons of bacon drippings |
4 qt water |
1 large onion, chopped |
2 teaspoons salt |
2 teaspoons pepper |
4 tablespoons minced garlic |
2 teaspoons worchestershire sauce |
1 teaspoon old bay seasoning |
Directions:
1. Wash collard greens in at least 3 changes of water to remove all sediment. 2. Remove stalks and thick veins and rip leaves into large pieces. 3. In a skillet partially fry bacon and retain drippings. 4. Bring water to a boil. 5. Add chopped onion, bacon, salt, pepper, garlic, Worchestershire sauce, Old Bay seasoning, and bacon drippings to boiling water. 6. Add greens to boiling water. 7. Reduce heat, cover, and simmer for 4 hours. |
