Ingredients:
2 cup(s) butter softened |
2 cup(s) sugar |
2 cup(s) packed brown sugar |
4 eggs room temperature |
2 teaspoon(s) vanilla extract or real vanilla |
3 cup(s) all-purpose flour |
2 teaspoon(s) salt |
2 teaspoon(s) baking soda |
6 cup(s) regular oats (not quick-cooking) |
2 cup(s) semi-sweet chocolate chips |
2 cup(s) toasted walnuts coarsely chopped |
1 cup(s) raisins |
1 cup(s) coconut |
Directions:
1. Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with non-stick foil. 2. In a very large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, salt and baking soda; stir into the sugar mixture until well incorporated. Mix in oats, then stir in the chocolate chips, nuts, coconut and raisins. Drop by heaping teaspoonfuls onto the prepared cookie sheets. 3. Bake for 10 to 12 minutes in the preheated oven, or until golden brown. Let cookies cool for a few minutes on the cookie sheets before removing to wire racks to cool completely. 4. *Note: You can prepare the dough and chill overnight, or roll into logs and wrap tightly, then freeze. Place thawed, chilled dough on cookie sheets and bake for same time as indicated in recipe. Cookies may spread and turn out flat depending on how you prepare the recipe and type of butter/margarine used. These cookies freeze very well. |
