Wildcat Cafe Blueberry Pancakes |

This is a great pancake recipe I haven't made in a long time. I used to buy a box of blueberries in season and freeze them to use year round. Ingredients:
1 1/2 cup all purpose flour |
1 1/2 cup whole wheat flour |
1 1/2 tsp salt |
2 tsp baking powder |
2 tsp baking soda |
1/2 cup of sugar |
3 eggs |
1/2 cup melted butter |
1 cup plain yogurt |
1 cup milk |
2 cups blueberries, fresh or frozen |
Directions:
1. Electric frying pan set to 350 degrees. 2. In a large bowl combine first 6 ingredients. 3. In a separate bowl beat together the eggs and add melted butter, yogurt and milk. 4. Pour over flour mixture and mix/stir until just blended but still lumpy. 5. Spoon 1/3 cup batter onto greased grill and sprinkle with blueberries. 6. When bubbles form on the top, flip and cook until bottom is browned. Approximately 4 minutes per side. 7. Keep the pancakes warm in the oven at about 200 covered with a slightly dampened tea towel. |
