WILD WEST CHILI DATED 1956 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Rodgers Estate in Greenville, Texas in 1994. Ingredients:
2 bacon strips diced |
1 pound ground beef |
2 teaspoons chili powder |
1-1/2 teaspoons salt |
1/4 teaspoon garlic salt |
1/4 teaspoons dried oregano |
1/8 teaspoons cayenne pepper |
5 drops hot pepper sauce |
14-1/2 ounce can diced tomatoes with juice |
1 cup finely chopped celery |
1 cup finely chopped white onion |
1 cup chopped finely carrots |
1/2 cup finely chopped green pepper |
16 ounce can chili beans with juice |
Directions:
1. In large saucepan over medium heat brown bacon and beef then drain well. 2. Add seasonings then cook and stir 5 minutes. 3. Stir in tomatoes, celery, onion, carrots and green pepper then bring to a boil. 4. Reduce heat then cover and simmer 40 minutes then stir in beans and cook 30 minutes longer. |
