Wild Salmon with Champagne Dill Cream |

Ingredients:
4 6-ounce skinless fresh wild salmon fillets |
1 tablespoon(s) butter |
1/2 cup(s) flour |
1 teaspoon(s) minced garlic |
1/4 cup(s) champagne |
1/4 cup(s) chicken broth |
1/2 cup(s) heavy cream |
salt and pepper to taste |
3 to 4 sprig(s) fresh dill, chopped |
Directions:
1. In a large non-stick sauté pan, melt the butter over medium-high heat. 2. Place the flour in a shallow dish and dredge and dust the salmon fillets. 3. Place the dusted fillets into the heated butter for two minutes. Turn the fillets and add the minced garlic. 4. Once the garlic begins to turn golden brown, add the champagne and deglaze the pan. 5. Add the chicken broth, heavy cream and simmer until reduced by half. 6. Add the chopped dill and serve. |
