Wild Salmon And Avocado Salad |

A beautiful Summer salad recipe that is so easy to put together. I sometimes have leftover salmon and now I have found a great way to use it in a completely different format. Enjoy! Ingredients:
approx. 1 lb. cooked salmon (roasted, poached, etc) |
1 ripe avocado, peeled and cubed |
1/2 red onion, thinly sliced |
2 tbsp. capers |
2 tbsp. freshly squeezed lemon juice |
2 tbsp. extra virgin olive oil |
2 tbsp. chopped fresh herbs, such as dill, basil, parsley, tarragon and/or chives |
sea salt and ground black pepper |
salad greens to plate |
lemon wedges for garnish |
Directions:
1. Break cooked salmon into chunks in a bowl. Gently toss with remaining ingredients. Refrigerate at least 30 minutes to allow flavors to blend. Serve or salad greens. Serve with lemon wedges. |
