Wild Rice With Slivered Almonds |

WILD RICE WITH SLIVERED ALMONDS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Candela Estate in Dallas, Texas in 1997. Ingredients:
3 cups vegetable broth |
1-1/2 teaspoon soy sauce |
1/2 teaspoon dried thyme |
1 cup wild rice uncooked |
1 medium white onion chopped |
1 stalk celery chopped |
1 tablespoon plus 1 teaspoon canola oil |
1/2 cup slivered almonds toasted |
Directions:
1. Combine broth, soy sauce, thyme and 1 teaspoon oil in a heavy saucepan then bring to a boil. 2. Gradually add rice stirring constantly then cover and reduce heat to low then simmer 65 minutes. 3. Set rice aside then sauté onion and celery in 1 tablespoon oil until tender. 4. Add to rice and almonds then toss and serve. |
