WILD RICE WITH SLIVERED ALMONDS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Candela Estate in Dallas, Texas in 1997.
Ingredients:
3 cups vegetable broth
1-1/2 teaspoon soy sauce
1/2 teaspoon dried thyme
1 cup wild rice uncooked
1 medium white onion chopped
1 stalk celery chopped
1 tablespoon plus 1 teaspoon canola oil
1/2 cup slivered almonds toasted
Directions:
1. Combine broth, soy sauce, thyme and 1 teaspoon oil in a heavy saucepan then bring to a boil.
2. Gradually add rice stirring constantly then cover and reduce heat to low then simmer 65 minutes.
3. Set rice aside then sauté onion and celery in 1 tablespoon oil until tender.
4. Add to rice and almonds then toss and serve.
