Wild Rice With Peppers And Feta |

Wild & Brown rice with tender-crisp peppers and feta cheese. Ingredients:
1 cups cooked wild rice (1/2 cup uncooked) |
3 cup cooked brown rice (1 1/2 cups uncooked) |
4 - 8 cloves garlic pressed or slivered |
2 onions sliced into rings |
3 cubed green, red &/or yellow peppers |
1 can corn niblets |
1/2 cup feta cheese |
Directions:
1. Cook rice for approximately 40 minutes 2. While rice is cooking, prepare onion, garlic and peppers 3. When the rice is almost done (30 minutes) start sautéing onion and garlic in a large non-stick pan (or use 1 Tbsp olive oil) 4. Add the peppers to the onion and garlic, when they are tender-crisp add the corn and rice 5. When the corn is heated through (a few minutes) add the feta cheese 6. Serve before the feta is completely melted, but is warmed up 7. Great served with grilled chicken! |
