Wild Rice-Vegetable Medley |

Ingredients:
olive oil-flavored vegetable cooking spray |
2 teaspoons olive oil |
1 cup chopped green pepper |
3/4 cup chopped onion |
3/4 cup finely chopped carrot |
1 (8-ounce) package sliced fresh mushrooms |
1 (2 3/4-ounce) package instant wild rice, uncooked |
1 1/3 cups canned no-salt-added chicken broth |
1/4 teaspoon salt |
1/4 teaspoon pepper |
fresh flat-leaf parsley leaves (optional) |
Directions:
1. Coat a saucepan with cooking spray; add oil. Place over medium-high heat until hot. Add green pepper and next 3 ingredients; saute until carrot is tender. Add rice and broth. Bring to a boil; reduce heat. Simmer, uncovered, 5 minutes or until liquid is absorbed. Stir in salt and pepper. Let stand 5 minutes. Garnish with parsley, if desired. |
