Wild Rice Stuffing For Cornish Hens |

This is a special treat when served with glazed orange sauce cornish hens. My family asks for this on special occasions. Ingredients:
1 (6 oz) pkg white & wild rice stuffing mix |
1/4 cup dry sherry |
3 tbsp butter |
1/4 lb fresh mushrooms, sliced |
1/2 cup finely diced celery |
1/4 cup toasted slivered almonds |
2 tbsp green onion tops |
1/8 tsp pepper |
Directions:
1. Prepare rice according to package directions, but substitute dry sherry for 1/4 cup of the water. In another skillet ( 8 ), over medium heat, add 3 tablespoons of butter and cook mushrooms and celery until tender, about 5 minutes. 2. Stir mushroom mixture into rice and add almonds, green onions and pepper. |
