Cold salad of wild rice and some vegetables and chicken. Easy to make and makes a lot Ingredients:
1 cup wild rice |
1 cup low sodium chicken broth |
6 ounces turkey |
1 1/4 cups broccoli florets |
1 carrot |
1 1/4 cups red bell peppers |
1 small onion |
2 ounces walnuts |
1/2 cup mushroom |
1/2 cup grapeseed oil |
3 tablespoons lemon juice |
3 tablespoons white wine vinegar |
1/2 teaspoon dry mustard |
1 teaspoon curry powder |
Directions:
1. rinse wild rice with hot water. Drain. 2. in pan combine chicken broth with two additional cups of water. 3. simmer for 30 to 40 min until all water is absorbed. cool. 4. Broccoli : chop small. 5. Carrot: slice thin rounds. 6. Red bell pepper: cut into strips. 7. onion: dice. 8. walnuts: light chop. 9. mushrooms: large dice. 10. in mixing bowl mix all ingredients except dressing. 11. in small bowl mix dressing ingredients until smooth. pour over salad. 12. mix and refrigerate. |
