Cashews or almonds would work well in this recipe too.
Ingredients:
3 cups cooked wild rice, chilled
2 red apples, diced (do not peel)
1 tablespoon lemon juice
2 tablespoons brown sugar
1/2 cup sour cream
1/3 cup mayonnaise
2 celery ribs, sliced
1/2 cup peanuts
Directions:
1. Toss diced apples with lemon juice and brown sugar.
2. Stir in celery and wild rice.
3. Blend mayonnaise and sour cream until smooth, mix all together.
4. Add peanuts just before serving.
