Wild Rice, Orzo and Mushroom Casserole |

This may be prepared ahead and chilled. Bring to room temperature and bake Ingredients:
1 cup orzo pasta |
1 cup wild rice |
2 1/2 cups beef broth |
8 cups mushrooms, sliced (either white or mixed) |
1 tablespoon oil |
2 tablespoons butter |
1/4 cup parsley, chopped |
Directions:
1. Cook orzo according to package directions. Cook the wild rice in the broth according to package directions. 2. Saute mushrooms in oil and butter and cook until liquid has almost evaporated. 3. Add mushrooms and parsley to rice and orzo. Mix well, 4. Bake at 350 for 30 minutes or until heated through. |
