Wild Rice,mushroom And Cranberry Dressing |

A crowd pleasing side dish. We love it with cornish hens. Ingredients:
3 c water |
1 tsp salt |
1 c wild rice |
1 tb olive oil |
1 c chopped shitake or button mushrooms |
1 small red onion,finely chopped |
1/2 c celery,chopped |
1/2 c dried cranberries |
1/2 c chopped toated pecans(optional |
1/2 tsp minced fresh sage or 1/8 tsp dried sage |
1/8 tsp black pepper |
Directions:
1. Preheat oven to 325' Spray 2 qt. casserole with non-stick cooking spray. 2. Bring water and 1/2 tsp salt to a boil in med. saucepan.Stir in wild rice. Reduce heat to low;cover and cook 45 mins mor till rice is tender. Drain well. 3. Meanwhile , heat oil in large skillet over med. heat. Add mushrooms,onion and celery;cook and stir 7 to 10 mins or till tender. Stir in wild rice,cranberries,pecans,if desired,remaining 1/2 tsp salt,sage and pepper. 4. Spoon mixture into prepared casserole. Bake 20 mins or till heated through. |
